Focussing on the Bar Management to ensure the product range was concise and correctly priced against cost. As a cellar bar with York Stone flooring and sawdust, the look of the venue was key to its success. Only one draft lager was sold, all the rest of the wet sales being wine. The wine list was constantly reviewed and marketing plans were always being amended to ensure customer awareness. The restaurant was developed into a highly successful 100 cover venue serving lunch and evening meals. Front of House training was ongoing and comprehensive, staff recruitment was thorough and ensured that the right staff were employed as the ethos for the business was for friendly, professional and knowledgeable, smartly presented staff in a high-class environment.
